Yum - Flaky Cornmeal Cheddar Scones

These scones are absolutely the best! They are crunchy on the bottom and flaky on the inside. Even picky toddler eats them!

Ingredients
•3/4 cup (175 mL) buttermilk plus 1 tbsp (15 mL) for brushing
•1/4 cup (50 mL) cornmeal plus 2 tbsp (30 mL) for dusting
•1 3/4 cups (425 mL) all-purpose flour
•1 tbsp (15 mL) each baking powder and granulated sugar
•3/4 tsp (4 mL) salt
•1/4 cup (50 mL) cold butter, cut into cubes
•1 cup (250 mL) grated old cheddar
•1/2 cup (125 mL) diced ham
•2 green onions, sliced
•1 egg


1.Preheat oven to 400F (200C). Lightly spray or coat a rimmed baking sheet with oil. In a medium bowl, add ¾ cup (175 mL) buttermilk and ¼ cup (50 mL) cornmeal and stir to combine.
2.In a large bowl, using a fork, stir flour with baking powder, sugar and salt until evenly mixed. Then, using your fingers, a fork or a pastry blender, work in butter until flour mixture is crumbly. Stir in cheese, ham and onions.
3.Whisk egg into buttermilk mixture. Then pour into flour mixture. Using a wooden spoon, stir until just combined. Gently gather into a ball. Then slice into 2 equal-sized portions.
4.Sprinkle remaining 2 tbsp (30 mL) cornmeal on a cutting board. Place 1 portion of dough on top and gently pat into a 6-in. (15-cm) circle. Cut into 6 wedges. Repeat with remaining dough, pressing into remaining cornmeal on counter before cutting.
5.Place wedges on baking sheet at least 1 in. (2.5 cm) apart. Lightly brush with remaining 1 tbsp (15 mL) buttermilk. Bake in centre of oven until lightly golden, 14 to 16 min.

Hello Internets

Hi There

Nice of you to stop by

blah blah blah.....

My first post.....how exciting! You are all in for a real treat. I am going to tell you about all my little life, my big dreams and everything in between.
Not sure where to start....my week included, in no particular order, poop on a chair, going to the dentist for my sweet mouth guard, agonizing over what shapewear to buy (spanx are not strong enough people!) dinner with my favorite brunette and regretting my choice to get gel nails.

So it might be time to start potty training when your 20 month rips off his clothes then his shitty diaper and jumps up on the chair......hence poop on a chair. sigh

When you picture the sexiest thing your wife could wear at night....what is it?.....A mouth guard of course! AD is so lucky to have me. I have 5 more days before this plastic little jewel comes in, I'll let you know how that goes.....or not.

Shapewear....seriously, light support, medium support, firm, extra firm.....so many to choose from. I think they should be labelled uncomfortable support, that's gonna leave a mark support and he is sooo not worth this support. Am I right? But it's either firm support or slim fast, enough said.

Dre, Auntie Dre, Dreola or Andrea. She and I met at the Flight Centre many moons ago (ok, 5 years ago but it seeeeeems like forever ago) we bonded over Big Brother, booze, and fat men with gold chains. I do NOT miss working with the public, oh, hells no. Anyways, we met for dinner, Indian, it was delicious as was our 3 hours of converstion.....the restaurant owner was giving us the stink eye....time to go! Can't wait for our next date....she makes me smile :) no, more like this :D

And lastly, gel nails....now I am not totally dissing but seriously, in my professional opinion, they suck. Not only were they uncomfortable for the first few days but they chipped after 2 days, not cool. I am going to have them taken off stat, as soon as I find the time after I have baked 2 dozen scones for Mother's Day, finished the laundry, cooked the salmon, cleaned the avacado of the wall (thanks little buddy) and brushed my teeth.
